2 lbs fresh strawberries, hulled and sliced
3 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 packages of vanilla wafer cookies or graham crackers
Whipped cream (for topping)
Whole strawberries (for garnish)
Directions
- In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Gently fold in half of the sliced strawberries into the whipped cream. - In a trifle dish or a large rectangular dish, start with a layer of vanilla wafer cookies or graham crackers at the bottom.
Spread a layer of the strawberry whipped cream mixture over the cookies.
Add another layer of cookies, followed by another layer of strawberry whipped cream mixture. - Repeat the layers until all ingredients are used, ending with a layer of strawberry whipped cream mixture on top.
Chill the cake in the refrigerator for at least 4 hours or overnight to allow the cookies to soften. - Before serving, top with additional whipped cream and garnish with whole strawberries.
