2 1/2 cups all-purpose flour
2 cups granulated sugar
1 1/2 cups unsweetened cocoa powder
2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
3 large eggs
1 1/4 cups buttermilk
1 1/4 cups strong brewed coffee, cooled
2/3 cup vegetable oil
2 1/2 teaspoons vanilla extract
1 1/4 cups boiling water
1 1/2 cups fresh blackberries
3/4 cup blackberry preserves
12 ounces dark chocolate, melted
Directions
- Preheat the oven to 350°F (175°C). Grease and flour four 9-inch round baking pans.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add the eggs, buttermilk, coffee, oil, and vanilla extract. Beat on medium speed until well combined. - Stir in the boiling water until the batter is smooth and thin.
Divide the batter evenly among the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks. - Place one cake layer on a serving plate. Spread with a layer of blackberry preserves and top with fresh blackberries.
Add the second layer of cake and repeat the blackberry preserve and fresh blackberry layer.
Repeat with the third layer of cake, blackberry preserves, and fresh blackberries. - Top with the fourth layer of cake. Pour the melted dark chocolate over the top, allowing it to drip down the sides.
Garnish with additional fresh blackberries and dark chocolate shavings if desired.
