3/4 cup dark cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
Directions
- Prep the Oven: Preheat to 350°F (180°C). Grease and flour two 9-inch round pans.
Mix the Batter: In a bowl, blend flour, sugar, cocoa, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat for 2 minutes on medium speed. - Add Hot Water: Stir in boiling water (batter will be thin but smooth).
Bake: Divide batter between pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Cool for 10 minutes, then transfer to racks to cool completely. - Assemble the Cake: Frost one layer on a serving plate. Top with the second layer and frost the top and sides.
